It was “Tuna Night” at the Sushi Chef Institute in Torrance the other night. We were introduced to the launch of Sushi Chef Agency, connecting restaurants with sushi chefs. . Chef/Instructor Andy Matsuda broke down a wild-caught local bluefin tuna to start the night. . Various dishes were made with the tuna, including nigiri sushi, sashimi, and fried tuna skewers. Every part of the tuna was used. . Scrapings from between the bones (nakaochi) were used for hand rolls by Chef Hiro Terada of @diariesofamastersushichef. . Edobox on a Friday! I finally made it over to Edobox by Makoto in Santa Monica. I created my own bento box for lunch with the following items: 1. BLUE CRAB SALAD cucumber . tobiko . yuzu kosho . spicy wonton . shiso 2. BRUSSELS SPROUTS kimchi . chive . chili threads 3. NEGI-TORO DON tuna belly . 8 grain sansho sushi rice . wasabi . kizami nori . sesame . shiso 4. DRY AGED FLANNERY BEEF DUMPLINGS karami soy . ginger . garlic The bento box was packed to go, but we enjoyed lunch on the patio. With so many dishes created by @chefmakoto, I had a tough time deciding and will be back to try more items and to enjoy dining outside. BTW, lunch was delicious.
