Slow roasted roast beef. Delicious! I used chuck roast. Use Himalayan salt all over and a dry rub. Let it rest on the counter for a little over an hour. Braised both sides. Set oven to 250degrees. Put meat on cookie sheet on a grate so the meat isn’t sitting in the juices. Stuck a thermometer in and put the meat in the oven, lowered the temp to 200 degrees. Done when internal temp was at 140 degrees. Let sit on counter for over an hour before cutting. Took about 4 1/2 hours.

First time smoking a 9.4lbs pork butt. It was delicious! Couple notes: - rub mustard on it - use rub generously - let it marinate overnight - inject liquid in before smoking - have a spray bottle of : Cup of water Tbsp of worsticher sauce Tbsp of rice vinegar - spray every hour - put apple juice in the bottom to help keep it moist - grill 225-250 - 1 hour 15 min per pound - bone should come out clean - let sit for at least 10 min

This is the first time I used my smoker. I seasoned it for 4 hours and put two 6lbs chickens on the smoker. Notes: •use chimney and 2 pieces of newspaper, wrap in a donut shape. Once red, pour in smoker box. •place aluminum pan in smoker area, fill with beer or apple juice •cut chicken in 1/4 pieces, to cook it properly •put all probes in meat •one probe on left side to determine proper heat •place meat on grill, keep shut as much as possible •later the charcoal in flat, not a mound. It lets it smoke longer and not so hot •add charcoal when it starts to drop around 215 ish •one piece of wood at a time, wet works well ••heard after the fact to inject chicken with a cup of chicken broth to keep it moist (will try that next time) •will try mop and/or spray too, keep it moist
