My wife's creation, and one of my and kids all time favorite dishes. Simply amazing tastes, and we never can get enough. No name it but she said "inspired" from Latin influences.
Start with the light yet very tasty roasted chicken with cumin and coriander. Little strips of al dente heaven, gorgeous texture and crunch. Fluffy, airy long grain rice with butter, basil and parsley. Raw salsa bouquet of raw onions, cucumber, tomatoes and herbs.
We always squeeze generous portion of lime on top of entire dish and the favors, texture just, works, beautifully. We fight over it, again and again.
Last night was made even more special as Grandma Choi also broke up fresh (I mean fresh, day 1) turnip kimchee made from a special turnip that just blends right in. Sorry, we ate it all before took a snap.
What should we call this dish?
